Wheelers
Dine-in style at Wheeler’s

Wheeler’s Oyster Farm

Traveling south and craving sophistication? This traditional Merimbula oyster farm, operating since the 1920s on the Sapphire Coast, takes farm-to-table to a whole new level – by quite literally setting the table in the water. Join the Wheeler’s team for a one-of-a-kind oyster tasting and farm tour, where the wine is crisp and local. Your tour begins with a cruise through their estuary and a wade into the water. Australia’s finest oysters are the freshest you’ve ever tasted, being harvested and served to you within minutes. Be prepared to shuck, taste the ocean, and chase with champagne!

The setting alone is worth the drive. Guests are treated to a pristine table in the water, perfect for pictures. Wheeler’s also offers a Bespoke Private Oyster Tour for special occasions celebrated by true oyster lovers. Bookings are made via their tour site, so check their calendar before heading south.

Captain Sponge's

Captain Sponge’s Tours

Nestled in a Pambula Lake jetty lives an oyster expert named Captain Sponge! Brett Weingarth, “Sponge”, farms multiple sweeping oyster acres through the Far South Coast, with his main attraction being a 1.5-2 hour scenic cruise overboard an oversized oyster barge. Embarking at 9:00 AM on Mondays, Wednesdays and Fridays, this magical experience takes you on a journey through the stunning Pambula Lake environment. You can look forward to learning about its geology, formation, and the cultural, natural, and ecological significance of the estuary through the interpretive eyes of your local longtime oyster farmer guide.

Educational, yes, but Sponge offers a genuinely wonderful afternoon on the water alongside a crash course in oyster husbandry. Rest assured that Sponge lives and breathes oysters, as he is involved in many community based events, including organising shucking competitions! You’ll be shown how Sydney Rock Oysters are farmed using modern aquaculture techniques to produce a prime, world-renowned sustainable shellfish, which of course, you can taste. Light refreshments are available, and the experience is free for kids under five. Perfect for children and adults alike, many of Captain Sponge’s visitors report returning season after season. If you’re after charm, character, and wonderful storytelling, this is for you.

Morrison's
Oyster shucking service at Morrison’s

Morrison’s Oyster Bar & Grill

Prefer to stay within the inner city? Located on charming George Street, Morrison’s dictates no waders, no mud, and no boat rides required. Expert shuckers handle the knives for you – sit back, relax, and enjoy a dry martini alongside a rotating daily selection of Australia’s finest seasonal oysters. Open late for the night-owls, walk-ins are welcome at Morrison’s (but reservations are available via their website). The team welcomes and embraces big groups, even up to 40 people!

Morrison’s is the ideal pick for the oyster lover who wants the flavour without the field trip. The rotating menu keeps things fresh, and the knowledgeable staff are always happy to help you walk through their daily offerings. They’re also proud to offer an Oyster Hour on Wednesdays from 6:00-7:00 PM, where you can taste freshly shucked to order for just $2 each! Whether you’re a seasoned shucker or curious first-timer, Morrison’s remains an easy, reliable crowd-pleaser.

Broadwater Oysters, oyster experiences in NSW

Broadwater Oysters

Ready to go to Shuck School? Owned and operated for 28 years by Greg Carton and Sue McIntyre, recipients of two NSW Coastal Conference Awards and the Government GREEN GLOBE Award, these folks take their oysters and the environment seriously. Broadwater Oysters in Pambula Lake offers options for intimate culinary experiences, one aptly named Shuck, Slurp, Top & Taste, meant for groups of eight. The other? A private class for two, optimal for molluscs lovers, and lovers in general. Each masterclass runs for 45 minutes, exclusively on Tuesdays and Saturdays, and comes with a complimentary glass of bubbles. For 25 years, both restaurants and the general public have relied on them to supply opened, unopened, and bottled Sydney Rock Oysters for pure enjoyment.

These award winning Sydney Rock Oysters come straight from the farm on Pambula Lake, and the Shuck School masterclass gives you the hands-on skills to enjoy them properly for as long as you live. You can expect to leave knowing how to identify subtle differences in “merroir”, the oceanic equivalent to terroir in winemaking. You’ll never look at an oyster the same way again!

Broadwater is flexible, offering a lakeside eat-in menu, grab-and-go options, and Australia-wide mail order if you’re craving them long after you leave (and you probably will).

Remember to always pack sunscreen and jackets for the safest, most comfortable experience out on the water. Whether you’re admiring the Hawkesbury river lease or people watching on George Street, remember to have a happy shucking!
